INGREDIENTS:
1-1.5lb ground beef
1 medium onion, diced
1 jalapeno, diced (remove seeds if desired)
1 can (4oz) fire roasted whole green chilies (You’ll need the whole chilies so you can reserve the juice left in the can)
1 can chili beans
1 60oz jar of salsa (I always use the whole foods band, it makes a big difference, for real)
tortilla chips
salt and pepper
cumin
chili powder
garlic powder

RECIPE:
I use an enameled dutch oven for this. You can use any larger pot that will fit everything.
1. Put oil in hot dutch oven. Cook down onion and jalapeno with a few pinches of salt and pepper
2. Add diced canned chilies and cumin, cook down further
3. Move cooked vegetables to side and add the meat, brown.
4. Add reserved chili juice, stir in salsa, and drained beans. Let simmer for a few mins.
5. Add a few handfuls of crushed tortilla chips to thicken. If the chili gets too thick you can add water or bean juice.
6. Let simmer until some liquid evaporates.
7. Serve with cheese and chopped tomatoes.

There we were, just finishing our appetisers when all hell breaks loose. Lights flashing, alarm sounding – everyone gets quiet and looks around. No one seems to be getting up to leave and the staff doesn’t look concerned so, we put it down to a false alarm and continue with the meal.
